Cornmeal Catfish Batter

ctfsh Cornmeal Catfish Batter - Not only is this a fabulous fish recipe, it’s our favorite catfish batter recipe. First the catfish is marinated, in a homemade marinade, recipe included, before beiny quickly skillet fried. We used wholesome cornmeal for this catfish batter recipe, just to switch it up a little.

Ingredients to make Cornmeal Catfish Batter

Marinade:
1/2 teaspoon ground oregano
3 tablespoons lime juice
3 to 4 scallions, chopped
3 tablespoons dry white wine
4 tablespoons olive oil
2 cloves garlic, minced

Fish:
2 pounds catfish fillets
1 teaspoon pequin chile flakes
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup blue cornmeal
2 eggs, lightly beaten
2 tablespoons olive oil
2 tablespoons butter
Lime wedgesMarinade:
1/2 teaspoon ground oregano
3 tablespoons lime juice
3 to 4 scallions, chopped
3 tablespoons dry white wine
4 tablespoons olive oil
2 cloves garlic, minced

Directions to make Cornmeal Catfish Batter

Step 1:

Mix the oregano, lime juice, onions, wine, oil, and garlic in a shallow glass dish. Arrange fish in the mixture and let marinate in the refrigerator for 45 minutes. Remove fillets from the marinade and discard the marinade.

Step 2:

Mix the chile flakes, salt and pepper with the cornmeal. Dip the fish in the beaten egg, then the cornmeal mixture.

Step 3:

Heat the oil and butter in a frying pan, and saute the fish until golden brown. Serve with lime wedges.

Ingredients to make Catfish Creole

4 whole catfish, cleaned with head and tail removed
1/2 cup prepared yellow mustard
1/4 cup cracked black pepper
1/4 cup olive oil
1/4 cup butter

Directions to make Catfish Creole

Step 1:Pat the catfish dry, and spread a layer of mustard over the surface. Place the cracked pepper onto a plate, and press the coated catfish into the pepper so it is well covered.
Step 2:Heat the olive oil and butter in a large skillet over medium-high heat. Fry the catfish for 3 to 5 minutes on each side, or until fish flakes with a fork.
