Molly’s Blackened Catfish Recipe

This is one of those recipes that requires a little bit of prep work and some patience but the wait and the work is definitely worth it.Catfish has always been one of my favorites and this is another example of how versatile the fish can be. Try this at your next feast for family or friends.
Ingredients to make Molly’s Blackened Catfish Recipe
2 Tablespoons sweet paprika
2 1/2 tablespoons salt
1 teaspoon onion powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons cayenne pepper
2 teaspoons lemon pepper
1 teaspoon whole thyme leaves
1 1/2 teaspoons whole basil leaves
Mix together and store in a lidded jar.
4 lbs. catfish fillets (total weight about 3 lbs.)
1/2 stick butter
1/4 cup olive oil
Steps to make Molly’s Blackened Catfish Recipe
Step 1 - Heat a black iron frying pan for at least 10 minutes over very high heat.
Step 2 - Cut each of the fillets in half. Melt the butter and mix with the olive oil.
Step 3 - Place the spice mix on a plate. Dip the fish into the butter and oil and then dredge on both sides in the spice mix.
Step 4 - Fry in a very hot pan just a few minutes on each side.

Cornmeal Catfish Batter - Not only is this a fabulous fish recipe, it’s our favorite catfish batter recipe. First the catfish is marinated, in a homemade marinade, recipe included, before beiny quickly skillet fried. We used wholesome cornmeal for this catfish batter recipe, just to switch it up a little.

Ingredients to make Cornmeal Catfish Batter
Marinade:
1/2 teaspoon ground oregano
3 tablespoons lime juice
3 to 4 scallions, chopped
3 tablespoons dry white wine
4 tablespoons olive oil
2 cloves garlic, minced
Fish:
2 pounds catfish fillets
1 teaspoon pequin chile flakes
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup blue cornmeal
2 eggs, lightly beaten
2 tablespoons olive oil
2 tablespoons butter
Lime wedgesMarinade:
1/2 teaspoon ground oregano
3 tablespoons lime juice
3 to 4 scallions, chopped
3 tablespoons dry white wine
4 tablespoons olive oil
2 cloves garlic, minced
Directions to make Cornmeal Catfish Batter
Mix the oregano, lime juice, onions, wine, oil, and garlic in a shallow glass dish. Arrange fish in the mixture and let marinate in the refrigerator for 45 minutes. Remove fillets from the marinade and discard the marinade.
Mix the chile flakes, salt and pepper with the cornmeal. Dip the fish in the beaten egg, then the cornmeal mixture.
Heat the oil and butter in a frying pan, and saute the fish until golden brown. Serve with lime wedges.

Simple Sauced broiled Catfish - This simple, sauced recipe for broiled catfish, is smothered in a spiced tomato sauce, that is outstanding. Quick and easy, these catfish steaks are ready in minutes, and are extremely moist and tender.

Ingredients to make Simple Sauced Broiled Catfish
16 ounces Catfish Steaks
1/4 cup Tomato sauce
1/4 cup Vinegar
1 1/2 teaspoon Sugar
3/4 teaspoon Fresh Dill — minced
1/8 teaspoon Paprika
1/4 teaspoon Pepper
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Vegetable Oil
Vegetable Cooking Spray
Lemon Slices
Fresh Dill Sprigs
Directions to make Simple Sauced Broiled Catfish
Rinse catfish steaks under cold, running water; pat dry and set aside. Combine tomato sauce and next 7 ingredients in a small bowl; stir well.
Brush half of mixture over 1 side of steaks. Coat rack of a broiler pan with cooking spray. Place steaks on rack; broil 4-5\” from heat, 5-10 minutes, depending on thickness of steak. Carefully turn fish over; brush with remaining tomato mixture. Broil an additional 6 minutes, or until fish flakes easily when tested with a fork.
Catfish with Potatoes and Carrots
There are many Catfish Recipes available that the entire family will enjoy but definitely not all of them. Catfish is a fish that not everyone enjoys.
Try adding carrots and potatoes to this simple catfish recipe.
Ingredients:
Three medium potatoes
A pound of catfish cut into nugget sizes
1 / 2 bell pepper (red)
A small onion, diced
A tablespoon of oil
A teaspoon of garlic powder
A tablespoon of oregano
Peel the carrots and potatoes. Cut carrots into pieces an inch long.
Cut the potatoes into bite size pieces. Cut the pepper into small bite size
pieces.
In a small cake pan, pour oil and potatoes, carrots, onion and bell pepper to
skillet. Sprinkle vegetables with oregano and garlic.
Place pan in the oven at 350 degrees for forty minutes. Remove pan from oven,
add the catfish and cook twenty minutes.
Serve hot from skillet.

Oven baked in just 20 Minutes, we first breaded it ever so lightly in distinctive parmesan cheese, then sprinkled it with healthy almonds. Baked to a golden brown, with a fresh, light taste, it is also a quick and easy recipe.

Ingredients to make Baked Catfish in Parmesan
6 Catfish Fillets (about 2 lb)
1/2 c Fresh grated Parmesan cheese
1/4 c Flour
Salt to taste Black pepper to taste
1 ts Paprika
1 Egg, lighty beaten
1 tb Milk
8 tb Butter, melted
1/4 c Sliced almonds
Directions to make Baked Catfish in Parmesan
Preheat oven to 350. Wipe the catfish dry. Blend together the cheese, flour, salt, pepper, and paprika. Combine the egg and milk in a flat dish
Dip the fillets in the egg mixture, and then coat with the cheese mixture. Arrange the fillets in one layer in a baking dish, and pour the butter over all. Sprinkle with the almonds.
Place in oven and bake for 20 minutes.
